Spicy Gochujang Braised Eggs

 

These savory, spicy eggs will absolutely be your next obsession. Jammy soft-boiled eggs glazed in a buttery, sweet-and-spicy gochujang sauce!

Serve them over warm white rice and thank me later ;)

 

INGREDIENTS

  • 6 eggs⁣

  • 3 Tbsp butter⁣

  • 4 garlic cloves⁣, minced

  • 2 Tbsp gochujang⁣

  • 1 Tbsp chili crisp ⁣

  • 3 Tbsp maple syrup⁣

  • 1 tsp soy sauce⁣

  • 1 tsp sesame oil⁣

  • 1/2 tsp rice vinegar⁣

  • Rice for serving⁣

  • Toasted seaweed (optional)⁣

* Serves 2 to 3

 

INSTRUCTIONS

  1. Make soft-boiled eggs by cooking eggs in the boiling water for 6 minutes and 30 seconds. Transfer them to an ice bath to cool down. Peel the eggs and set them aside.⁣

  2. In a skillet over medium-low heat, melt the butter. Then, add minced garlic, gochujang, chili crisp, maple syrup, soy sauce, sesame oil, and rice vinegar. Cook everything until the sauce thickens slightly.⁣

  3. Add peeled, cooked eggs to the pan with the sauce. Using a spoon, glaze the eggs with the sauce.⁣

  4. Serve them over rice, and sprinkle some toasted seaweed. ⁣

    NOTE: This sauce is amazing on other proteins too—tofu, mushrooms, or even a mix with eggs.
