Spicy spam rice bowl
This is my spicy, cheesy take on a spam rice that I make all the time! When you microwave rice with spam on top, all that delicious fat from spam gets mixed into the rice, and a combination of gochujang and ketchup seasons the rice perfectly!
This is THE rice bowl to make when you want something incredibly delicious with little to no effort.
INGREDIENTS
Cold rice
1 Tbsp gochujang
1 Tbsp ketchup
1/2 cup spam, chopped
1 tsp soy sauce
1 tsp toasted sesame oil
1/4 cup pickled radish (optional)
2 scallions, chopped (plus more for garnish)
1/2 cup cheese (mozzarella or cheddar preferred)
1 egg
Chili crisp for garnish
Crispy seaweed for serving

INSTRUCTIONS
Add cold rice, gochujang, ketchup, and diced Spam to a microwave-safe dish. Cover and microwave for 3 minutes.
Remove the lid and mix everything well. Season with soy sauce, toasted sesame oil, chopped pickled radish, and scallions. Mix again.
Top with cheese and a cracked egg (poke the yolk to prevent it from exploding). Cover and microwave for another 3 to 4 minutes, or until the cheese is fully melted and the egg is cooked to your liking.
Garnish with scallions and chili crisp. Serve with crispy seaweed on the side.
NOTE: If you're not a fan of Spam, feel free to swap it out for other proteins like rotisserie chicken, sausage, or canned tuna!
