spicy chewy potato (bunmoja) noodles

 

Bunmoja became popular in Korea as one of tteokbokki’s chewiest toppings. I couldn’t find it in the U.S. for the longest time until I finally spotted it in the fridge section at H Mart. After watching endless videos of people slurping these bouncy potato noodles drenched in spicy sauce, I was DYING to try them.

And when I finally did, WOW. I became OBSESSED with the texture. Imagine if plump rice cakes and chewy rice noodles had a baby 😉

Of course, I had to drown these noodles in a sizzling, spicy, savory sauce to bring everything together, and honestly, this ended up being one of the best things I made this year! 😮‍💨

Spicy, savory, and after just one bite, you’re already salivating for more. Truly, this sauce deserves its own spotlight. Even if you don’t have bunmoja potato noodles, make the sauce and put it on dumplings, rice, or any noodles. You will love it, I promise!

 

INGREDIENTS

  • 8 oz bunmoja potato noodles

  • 1 scallion, chopped

  • 1 Tbsp soy sauce

  • 1 Tbsp black vinegar

  • 1 Tbsp gochugaru

  • 1/2 Tbsp toasted sesame oil

  • 1 tsp granulated sugar

  • 1 tsp chicken powder

  • 1/4 cup neutral oil

* Serves 1 to 2

INSTRUCTIONS

  1. Cook the bunmoja potato noodles in boiling water for 1–2 minutes, or until they are plump.

  2. Transfer the cooked noodles to a bowl. Add the scallion, soy sauce, black vinegar, gochugaru, toasted sesame oil, granulated sugar, and chicken powder.

  3. Heat the oil over high heat until it’s smoking hot (about 2 minutes), then pour it directly over the noodles.

  4. Mix everything well and enjoy!

NOTE: The sauce is enough to make another round of noodles or use with other dishes like wontons or rotisserie chicken.
